Recipe: 2 lbs chuck roast 1/2 cup beef broth 2 carrots, 1/2 inch slices 1 medium onion, sliced 5-6 garlic cloves 2 tsp salt 1 tsp paprika 1 tsp garlic powder 1 tsp onion powder 1 tsp coriander 1/2 tsp black pepper 1 tsp avocado oil (or neutral oil) Wash and slice carrots and onion. Add to a baking dish and pour in the beef broth. Pierce 5-6 holes in roast using a knife and insert the garlic cloves. In a small ramekin mixed together all the spices. Rub chuck roast with oil on both sides then season with spices and rub into the roast. Place chuck roast into baking dish on top on vegetables. Cover tightly with foil and bake at 325 for 3 1/2 to 4 hrs. Beef should easily shred when done. Remove from oven and let it rest 5-10 mins. Serve whole or shred the chuck roast.
