He and I have become good friends - I know how much he cares + how hard he works. However, seeing the grind in person was different. Between 4-10am, Spongies makes over 3,000 sponge cakes. There were 16 flavors that day and each batch takes about 35 minutes (from creating the batter to the actual baking process). The original flavored sponge cakes cost $1 while the specialty flavored ones cost $2. This is one of my favorite places in Chinatown and also a business born out of an immigrant’s American dream. Fernando immigrated to NYC in 1992 (the year I was born) and learned how to make traditional HK-style sponge cakes and speak fluent Cantonese from the OG baker (Mr. Tsang) of original ownership at the Old Kam Hing before ownership changed hands.
